This summer, our Airstream sat more than it rolled—only three camping trips instead of our usual wandering rhythm of six or seven. Some repairs were needed after a few mishaps. But everything heals, including aluminum travel trailers, especially when you have insurance coverage.
Last week, we finally returned to camping in the Airstream, affectionately known as Bambi, the model name of our 19-foot Airstream. We joined friends for three nights on Mt. Hood, nestled among ancient giants and the delicate vine maples. Being back in the cathedral of old growth felt like exhaling after what’s going on in our country. It’s hard to witness the cruelty and lack of values from government officials. Getting out in nature is where I remember who I am underneath all the outside noise.
When the world's chaos threatens to pull me under, I return to the earth that holds me. Nature doesn't argue with the news cycle—it simply is. Present. Rooted. Breathing.
I spent the grounded months tending our little piece of paradise instead. Hands in soil, heart in the work of growing beauty.
Right now, I'm in full harvest mode, buying every Maryhill peach I can find in Portland. We've already tucked some away in the freezer—future pies for our dinners with friends in the winter. Our freezers overflow with the bounty of summer: boysenberries, raspberries, blueberries from our own vines. John foraged the neighborhood blackberries when they ripened. Right now, the Concord grapes hanging heavy on our backyard vines will transform into Christmas jam—little jars of August sunshine wrapped in December bows.
I call our third of an acre "the urban farm." Four raised beds overflow with tomatoes, lettuce, herbs, and kale. I scattered tomato plants throughout the sunny corners of the yard among flowers and berries.
The sauce I've been making from the tomatoes is so delicious that I wanted to share the recipe with you. Oven-roast them with basil, garlic, and fresh oregano, then sprinkle olive oil and balsamic on top and bake until slightly caramelized. Next, blend them and transfer the mixture into jars. It's what pasta dreams are made of.
